Homemade Tomato Soup

2 tbsp unsalted butter
1/2 large yellow onion chopped
2 cloves garlic minced
28 ounce crushed tomatoes or whole, peeled
2 cups water or chicken or vegetable broth
1/4 tsp black pepper
Directions
- Melt butter in large saucepan. Add onion, saute over medium-high heat until translucent, 3 – 5 minutes. Add garlic and cook 1 minute more.
- Add tomatoes, water and pepper. Bring to a boil. Reduce heat and simmer 35 – 40 minutes, stirring occasionally. Add salt to taste.
- Use immersion blender to blend soup until just smooth OR working in batches, ladle into blender and blend until smooth. Only fill blender 2/3 full to avoid hot liquid from splashing out.
